
| 1 Earth Fare baguette, cut into ¾” thick slices | |
| 1 cup finely chopped red onion | |
| 3 cups diced tomatoes | |
| ½ cup finely chopped fresh basil | |
| 2 tbsp extra virgin olive oil | |
| 2 tbsp balsamic vinegar | |
| Black pepper to taste | |
| Sliced fresh mozzarella, same size as baguette slices | |
| 2 cloves garlic, minced | |
| Balsamic glaze for serving |
A fresh summer appetizer made with toasted Earth Fare baguette slices, melty fresh mozzarella, juicy tomatoes, red onion, basil, garlic, olive oil, and a sweet balsamic glaze. Simple, bright, and perfect for serving warm right out of the oven.
| 1. | Preheat oven to 375 |
| 2. | Cut the baguette into thick slices and lay them on a large baking sheet in a single layer. Set aside. |
| 3. | Chop the onion and add to a medium bowl. |
| 4. | Cut the tomatoes into quarters, and dice into small pieces. |
| 5. | Add the chopped tomatoes, chopped fresh basil, minced garlic, extra virgin olive oil, balsamic vinegar, and black pepper to the bowl with diced red onions. Gently mix everything together. |
| 6. | Cut fresh mozzarella and set aside. |
| 7. | Toast the prepared baguette slices in the oven for 5 mins on one side. Take them out of the oven, brush with olive oil, flip, brush the other side then add fresh mozzarella to each slice. |
| 8. | Turn the oven up to 425F, place baguettes back into the oven for another 5 mins or until the baguette is golden and the cheese is melted. |
| 9. | Top the slices with the tomato mixture, season with salt and pepper to taste. Drizzle with balsamic glaze and serve immediately. |
