The aroma and characteristic flavor of vanilla come primarily from vanillin. Natural vanilla comes from the pod of orchids from the vanilla plant. Vanillin is a lab created molecule responsible for vanilla’s smell and taste. Most modern-day vanilla flavor (about 99%) comes from artificial vanillin. It’s cheaper and faster to produce. There are some drawbacks of vanillin as studies show that trace amounts of neurotoxins in vanillin could harm brain cells. There is also concern around environmental impacts as it is not sustainably sourced and threatens natural vanilla farmers. Consider your priorities when choosing between the two!
