Sodium propionate (Na(C₂H₅COO)) is the sodium salt of propionic acid. This ingredient is used as a food preservative and acts as a antimicrobial agent to slow and prevent mold and bacteria growth. Its often used in bakery products and in the medical field combined with other ingredients to treat fungal infections. However, there is little to no nutritional value, and research continues to uncover its negative effects on metabolism.
