Mono and Diglycerides and lactylated esters of (MDG) are compounds consisted of glycerol molecules and fatty acid chains. They are naturally occurring in certain oils and processed foods as they also serve as emulsifiers helping oil and water blend. Lactic acid esters are used to improve texture and even shelf life mostly in baked foods. These esters do not play a significant nutritional role and may very well impact overall health.
*Mono- and diglycerides are permitted only when sourced from non-hydrogenated fatty acids and are not allowed if derived from hydrogenated fats.*
