Lactylated esters of mono- and diglycerides (LACTEM)are produced by a chemical reaction between mono- and diglycerides of fatty acids and lactic acid. They are food additives commonly found in dairy products like milk, cheese, butter, yogurt and some sweetened beverages. Its important to be mindful of additives that offer no nutritional value, and potentially damage existing nutrients.
