Disodium Guanylate, also known as sodium 5’-guanylate, is a natural sodium salt derived from guanosine monophosphate (GMP). It is a food additive most commonly used to enhance flavor, specifically umami a savory meaty taste. GMP is often used in conjunction with monosodium glutamate (MSG). While the FDA has deemed this ingredient safe for consumption, it is important to be mindful of sensitivities especially if you have existing reactions to MSG.
