Raise your hand if “eating more fruits and vegetables” is one of your New Year’s Resolutions. Plant-based foods are nutrient-dense and provide us with essential vitamins and minerals, like iron, Vitamin A, folic acid, and so much more. In fact, making fruits and vegetables a big part of your meals can help you stay fuller longer, have more energy, and even feel healthier. It always sounds easy at first until you start dreaming of pasta and nachos and your favorite desserts, right? Luckily, canned fruits and vegetables make putting a plant on any meal quick and easy. Check out these three simple recipes made with some of our favorite Earth Fare canned produce.

Greek Pasta:
1 box of spirali pasta
1 can of quartered artichoke hearts, cut into bite-sized pieces
2 cups of canned black olives
Crumbled feta cheese, to taste
Olive oil + lemon juice, to taste

Cook pasta, and while pasta is cooking, combine artichokes, olives, and feta cheese. When pasta is finished, drain and drizzle olive oil and lemon juice on top to taste. Add vegetable mixture and combine with warm pasta.

Weeknight Tacos:
1 pound ground grass-fed beef
Taco shells
Salsa
Canned black olives
Cilantro, chopped

Brown ground beef in skillet until no longer pink. Drain meat, then serve on top of taco shells. Top with salsa, black olives, and cilantro. (Or mix up your toppings anyway you want for a fun, filling dinner!)

Pineapple Salsa:
1 can of pineapple, diced
¼ cup cilantro, finely chopped
1 jalapeno, seeded and minced
1 lime, juiced

Combine all ingredients thoroughly and chill. Delicious as a sweet and spicy dip or topping.
