Christmas cookies are as classic as chestnuts roasting on an open fire or Jack Frost nipping at your nose. And that’s why we challenged our Earth Fare Home Office to make Clean versions of their holiday favorites, and they delivered.

Peanut Buttercup Blossoms
-1 ¾ cup unbleached all-purpose King Arthur flour
-1 tsp Earth Fare baking soda
-½ tsp salt
-½ cup Vital Farms grass-fed butter
-⅓ cup Earth Fare peanut butter
-½ cup Earth Fare organic cane sugar
-½ Earth Fare cup organic brown sugar
-1 Earth Fare cage-free egg
-1 tsp Earth Fare organic vanilla
-Justin’s Mini Peanut Butter Cups

1. Preheat oven to 375 degrees.
2. Sift flour, baking soda, and salt together
3. Cream butter and peanut butter together
4. Gradually add sugar and brown sugar
5. Cream well and add egg and vanilla
6. Gradually blend in dry ingredients
7. Shape dough into 1 inch balls and roll in sugar. Place on ungreased baking sheet.
8. Bake for 8 minutes. Remove from oven and top with Justin’s Mini Peanut Butter Cups. Return to oven for 2-5 minutes.

Gingerbread Friends

-½ cup Vital Farms grass-fed butter, softened
-¾ cup packed dark brown sugar, Earth Fare brand
-⅓ cup Wholesome organic molasses
-1 large Earth Fare cage-free egg
-1 tablespoon filtered water
– 2 ⅔ cups King Arthur unbleached flour
-1 tsp Earth Fare baking soda
-½ tsp salt
-2 tsp Earth Fare organic ground ginger
-½ tsp Earth Fare organic ground cinnamon
-½ Earth Fare organic ground nutmeg
-½ Earth Fare organic ground allspice
-Organic frosting of choice (we used Wholesome organic vanilla frosting)

1. Cream butter and brown sugar until light a fluffy. Beat in molasses, egg, and water.
2. In another bowl, whisk together remaining ingredients minus frosting. Gradually beat into creamed mixture.
3. Divide dough in half, and shape each into a disk. Wrap in plastic. Refrigerate until easy to handle, about 30 minutes.
4. Preheat oven to 350 degrees. On a lightly floured surface, roll each portion of dough to ⅛ inch thick. Cut with a floured 4 inch gingerbread person cookie cutter. Place 2 inches apart on greased baking sheets.
5. Bake until edges are firm, 8-10 minutes. Remove to wire racks to cool completely. Frost as desired.
*If you can’t find dark brown sugar, simply add a tablespoon of molasses to regular brown sugar!

Vegan Chocolate Chip

-½ cup Earth Fare organic virgin coconut oil, solid
-1 ¼ cups Earth Fare organic light brown sugar, packed
-2 tsp Earth Fare organic vanilla
-¼ cup Earth Fare organic coconut milk
-¼ cup Earth Fare organic unsweetened applesauce
-2 ¼ cups King Arthur unbleached flour
-1 tsp Earth Fare baking soda
-½ tsp salt
-2 cups Enjoy Life vegan chocolate chips, divided
-flaky sea salt, optional

1. Preheat oven to 375 degrees. Line a large baking sheet with parchment paper; set aside.
2. In a large bowl, whisk together coconut oil, brown sugar, and vanilla, beating until well combined. Add in coconut milk and applesauce and whisk until well-combined.
3. In a separate bowl, combine flour, baking soda, and salt.
4. Add the dry ingredients into a wet mixture and use a sturdy spoon to stir until well-combined. Batter should be very thick.
5. Fold in 1 and ¾ cups of the chocolate chips.
6. Scoop three tablespoon sized mounds of dough onto the cookie sheet, leaving a few inches between each.
7. Bake for 9 to 10 minutes, until the edges are golden and the centers have set. Press remaining chocolate chips on top of warm cookies and sprinkle with sea salt.

*Not a fan of coconut? Substitute organic unsweetened almond milk for coconut milk and use organic refined coconut oil to lose the coconut-y taste.
