Pumpkin Salsa
Ingredients:
1 cup chopped pumpkin, blanched
2 large tomatoes, chopped
2 jalapenos, seeded and diced
1 chopped red onion
1 clove garlic, minced
2 tbsp. fresh cilantro, chopped
2 tbsp extra virgin olive oil
1 tbsp dried cranberries
Salt and pepper to taste

Yields: 4-6 servings
Directions:
Blanch chopped pumpkin in boiling water for 3 minutes. Shock in cold water. When cooled, place on paper towel to get excess water out. Salt slightly.
Combine all ingredients in a large bowl, drizzle with the olive oil and salt & pepper to taste. Cover and let sit out at room temp for 1-2 hours.
Serve with your favorite tortilla chips, on top of baked brie, or toasted naan bread. This salsa goes great on top of fish or turkey!
