Potassium sorbate is the potassium salt of sorbic acid. It is a food preservative as it helps to prevent and slow the growth of mold and yeast in some foods. It is commonly found in cheese, wine, yogurt, dried meats, dried fruits and baked goods. But it can also be found in some cosmetics and personal care items for the same purpose. It is produced by neutralizing sorbic acid and potassium hydroxide. Studies suggest concerns around Genotoxicity. That high doses of potassium sorbate could damage genetic information and cause mutations, but the evidence is not conclusive.
