Oxystearin is a modified fatty acid used as a crystallization inhibitor and release agent. It is used as a texturizer to achieve a smooth and creamy consistency in some foods. In vegetable oils its purpose is to prevent clouding. As a release agent is often used in fast food to prevent stickiness on kitchen tools and equipment. Research has not concluded any long term health effects. However, some may be sensitive to this ingredient and it could interfere with nutrient absorption.
