Sodium benzoate is a widely used food preservative and pickling agent. This odorless compound is typically added to processed foods, beverages, and personal care products to extend their shelf life. It inhibits the growth of harmful bacteria, mold, and other microbes, particularly in acidic foods like soda, pickles, and salad dressing. Studies do suggest sodium benzoate could increase the risk of inflammation, obesity, ADHD, and some allergies.
