Mono- and Diglycerides serve as emulsifiers, helping oil and water blend. Monoglycerides have one fatty acid chain, while diglycerides have two. Acetylated esters contain mono- and some di-esters of fatty acids with partially acetylated glycerol. Acetylated esters are used in food processing and can enhance texture and consistency. While generally recognized as safe by regulatory bodies, some people may prefer to limit their intake due to concerns about processed food additives.
