Isoglucose is a starch-based fructose sweetener. It is produced by the action of the enzyme glucose isomerase on dextrose (glucose). It is derived from corn that is milled to extract starch. In a lab process altering the enzymes to metabolize starch, it converts to sugars or fructose. Depending on the level of processing, isoglucose can contain anywhere from 42% -55% fructose, and offers no nutritional value. Manufactures use this ingredient in soft drinks, desserts, candies, chewing gum to name a few. Altered sweeteners like these could potentially effect metabolism, diabetes, obesity and other health concerns. Try natural sweeteners to be on the safe side, and remember moderation is key!
