Sucrose Esters, also known as sucrose fatty acid esters, are a group of non-naturally occurring surfactants synthesized by esterifying sucrose (table sugar) with fatty acids. These are known as Hexa-esters, Hepta-esters, and Octa-esters. They are are used to help the emulsify as they bind water and oil in food, enhance texture, appearance, and even extend shelf life.
