Ethylenediaminetetraacetic Acid (EDTA), commonly known as EDTA acid, is an aminopolycarboxylic acid. EDTA acts as a chelating agent, capturing metal ions and preventing their adverse effects. For this reason it is commonly used in the medical field, but also the food industry! It prevents food from being effected by ferric, cupric and manganic ions during the bleaching process which aids in preservation, and shelf life. Research continues around serious side effects and medication interaction when consuming this ingredient.
