Disodium Dihydrogen (EDTA), is a white, crystalline powder used as a chelating agent. It binds to molecules—often metal ions—to neutralize them. In the food industry it is used as a chelating agent to bind metals and prevent them from causing flavor loss. For example, salad dressing, mayo, pickled veggies, canned goods, and even canned beverages. While the FDA has approved this ingredient for consumption its important to weight its health benefits as it could interact with medications.
