Carmine, also known as cochineal, is a vivid red pigment obtained from the aluminum complex derived from carminic acid. Carminic acid is made from the bodies of dried female scale insects called Dactylopius Coccus. After the insect bodies are crushed and mixed with an alcohol solution, cermini acid is extracted and used as a food colorant. You will find this listed on food labels as “natural red 4, C.I. 75470, or E120.
