Job Description

Responsibilities:

Will cut & trim meat to size for display or as ordered by customer, using handtools and power equipment, such as grinder, cubing machine, and power saw.
Clean and cut fish and poultry. 
Shape, lace, and tie meat cuts by hand, using boning knife, skewer, and twine to form roasts. 
Place meat in containers to be wrapped.
Placing meat on trays in display counter.
Merchandising full primals to maximize profits.
Maintain clean and safe work environment at all times. 
Proper sanitation/cleaning of all equipment and cases, along with proper handling and storage of products. 
Receiving product and loading into refrigerator. 
Any other duties as assigned by the organization.  

Requirements:

Excellent guest service skills and “can do” attitude.
Minimum of 2 years full-time cutting experience.
Ability to trim, cut and wrap to specification. 
Know how to set-up and breakdown all equipment contained in the meat department; including: grinder, bone-saw and cuber. 
Must be well versed in food safety and cross-contamination procedures. 
Must know how to properly clean and sharpen knifes, change saw blades and clean block surfaces.
