Hiking to Health with Sandra
I wanted to hike the Appalachian Trail from Georgia all the way to Maine.
I love being in nature, so hiking in the woods everyday for six months seemed like the thing to do. Knowing it would take a lot of energy to hike 2000 miles, I went to Earth Fare in my hometown, Columbia, South Carolina. I started reading labels.
Food is heavy. I needed the nutrition of a five pound steak in a 5 ounce energy bar. I needed a lot of healthy carbohydrates and vitamins.
Organic rolled oats with dried cherries would suffice for 180 days of breakfasts. Amy’s macaroni and cheese fit the bill for lunches, and organic dehydrated soups and beans were light enough to carry for suppers. I snacked on Emergen-C drink packets, multivitamins, and energy bars.
I packed my healthy food into ten boxes and my husband mailed them to Post Offices along the Trail while I was hiking. I made it to Maine! Thank you, Earth Fare.
